Anyone else hate how immature cooks can be/boh in general? Gets super annoying when guys in their late 20s/30s act so childish throughout the shift. Ok so I’m reading the final empire for the first time (for background I’ve also read all of stormlight and warbreaker) and WOW. Just got the beginning of the Sanderlanche (I assume idk maybe not) where Vin just DESTROYS Shan and damn. I thought Kelsier was gonna be the badass Kaladin of the series but now I’m thinking it’s definitely Vin. These Mistborn fights are incredibly exciting, reminds me of when I first read the way of kings prologue and it’s just all great feelings of nostalgia. Anyways back to reading!
P.S. excited to be on this sub now but will be very limited in visiting because spoilers.

I love this forum. I'm new-ish to cooking. I'd like to improve. I've searched through posts, sifting by top, most popular etc., for the best tips on improving one's cooking game. I've made an intro post (here: https://www.reddit.com/Cooking/comments/q0zbci/improving_cooking_skills_rouxbe_as_my_online/) Candidly, I thought there'd be a more robust discussion. Questions, first, then some background and ideas from me:

Here are some of my answers to those questions, FWIW. But, I'm merely a OK cook. I started cooking about 8-9 years ago in earnest (when the kids arrived and my wife was overwhelmed). I'm an overachiever -- and I rose from the ashes of poverty to be someone who works in a profession that allows me to do quite well. I earn too much at my day job to leave (e.g., golden handcuffs, it's a great problem). I enjoy cooking to some degree, but also see it as a means to an end.
I'm an artist, too (musician, mostly drums, but I also do some writing). I'm trying to find more ways to get creative in cooking--but to date, it's mostly about following every last letter of every recipe (OK, in the last 3-4 years, I will sometimes skip spicy stuff for the kids, or even add some sugar to vegetables to try to get the kids to eat them)--but, for the most part I'm a slave to what's on the page, which in my view is the anti-thesis to creativity.
I've focused on technique in the last year or so by taking some online cooking courses. Those have been valuable. My knife skills have vastly improved. I've made 34 soups in the last six weeks--and that has dramatically improved pure technique of cutting things up and getting them into the pot. (It's also improved my pattern recognition for recipes, and made me much quicker).
For me, #1 is I started taking an online cooking class. It worked with my schedule, it was super cheap ($10 per month -- dirt cheap for a skill you'll use your entire life).
#2 is the soup challenge, where I challenged myself to make 25-50 soups in 60 days. I pick out the soup I want, research it on google and youtube; settle on a recipe and then make it and critically analyze it. It's helped refine knife technique that I learned in class, and also made me much quicker and made my knife cuts very conformed to same size so the parts take equal time to cook.
*In order to become a "good" cook must one be able to make an appetizer, salad--along with an entree and dessert -- or does any one meal sphere qualify one to be a good cook?
I think so. I think being well rounded is a key to confidence in being able to make things for consumption in a family. So far, I've focused on desserts, and soups; and made a bunch of entrees. I think as I consume more of the online cooking courses, the entrees will come, too.
It does seem to me that soups are an easier way to practice some of the skills in a more forgiving environment (soups are forgiving is what I mean.).
Yes--soup--for several reasons. An old roommate worked at a high end restaurant. He explained that most chefs start at restaurants making soups. I have no idea whether that's accurate, but it was his opinion. Years later, I resurrected it and adopted it. Second, for me cooking is simply overwhelming-- there are so many choices I can get lost in the decisions that need to be made. I determined, however, if I'm focused on making a single soup, I can focus on just that, review a few recipes, then just go for that one thing. No one is relying on it, necessarily, as the meal for that night, and so it takes some pressure off too.
Finally, because I'm trying to lose weight, it's a great way for me to add many more vegetables into my diet. And, soups tend to fill one up pretty quickly--so it's helpful for that too. (I freeze them and then microwave them at the office).
Personally, I find frequent conflict, between trying to cook and consume purely the "most nutritious" food --and dividing food between "good food" and "bad food." I try to focus, instead, on caloric density and quantity of food. To that end, I have made many desserts (including lots of ice cream with the ice cream maker). But, I tend to serve each of my four family members with a 2 ounce container (super small). The idea being, dessert is fine and should NOT be skipped, but rather should be consumed in LIMITED quantity.
The other part that seems to be in conflict is that some foods ARE calorically dense but are classic dishes (and often as flavor is enhanced calories rise, all else being equal). But, I'm sure there are smart ways around this. Indeed, this is why I am constantly recommitting myself to try to learn everything I can about ways to cook to enhance nutrition.
Aside from the dessert examples, I often think of baking in this way too. On the one hand, I think there are many opportunities to use an oven to cook protein, dutch oven one pot meals, and many other smart ways. But, more classically, I think of baking as short breads, cookies, muffins, cakes, and other sweet treats. I think if I want to become a "home CHEF" I feel compelled to learn all of those techniques. But this is contrary to weight loss goals and somewhat contrary--I think--to nutritional health goals (I think broadly folks agree we should consume less rather than more sugar and flour -- but I'm happy to hear contrary ideas). Finally, I do think moderation is the key here.
I do think that cooking at home is such a huge cost savings, that it **IS** proper to make SOME indulgent food, particularly when you can make it for $10, but it would be $120 meal out at a restaurant. And, I now recognize at restaurants what i never saw before: The linear line of the meal: appetizer, soup, main dish (or family style main dishes) and dessert. (I'm not a drinker but for many it would include a cocktail and a drink of wine at the end).
Lastly, I still have this vision in my head--mostly from this prior roommate who was an experienced chef who could make a three course meal of anything, out of just nothing, and it was incredibly good -- that I'm going to get to this place where I can just plan out a 3-4 course incredible meal and get it on the table in an hour like a professional chef. Has anyone else been able to go from 0-60 like that in a few years? Someone else said recently their trick was some of it was prepared in advance -- I'm down for that -- but my roommate (and another guy I knew who was an incredible chef) -- could just see it from 20 miles away, and put it a complex meal together like a boss, while chatting with 10 people. Seeing it now in retrospect, it really is remarkable.
